About NOMU
Discovering local areas through Sake
Nomu is a project that showcases the sake from one specific region in Japan, to feature their local history and culture, and methods of brewing sake. Re-branding is being undertaken to promote these breweries, spreading their reputation and seeking new sales markets both inside and outside of Japan.
Launch
We will be hosting three days of tasting projects at Hazel Restaurant.
This project is aiming to highlight the area where sake has not yet been explored, that is now seeing an increase in demand.
We wish to introduce high-quality sake breweries from Shizuoka, often described as “Shizuoka Kingdom of Ginjo”.
We are teaming up with The Mulberry Group who successfully run award-winning restaurants, including Hazel, as well as their social enterprise farm Common Ground Project in Freshwater Creek.
This is the first time these sake’s will be tasted in Melbourne.

Our sake portfolio has been carefully selected from 10 breweries to cater for everyone from first time sake customers to hard core sake lovers. A sake and Japanese tea workshop (2pm) will also be held.

NOMU × Hazel Dinner
Join us at Hazel restaurant for an exclusive four-course dinner matched with some of the finest, small-batch Japanese sakes on the market. Hazel’s head chef Aliks Kalnins, has designed a menu to highlight the complexities and subtleties of this wonderful drink.

Features of launch

Tastings from 10 breweries
We have brought together 10 small to medium size breweries under the name “Fuji no Sake” named after the iconic Mount Fuji. This selection is a unique offering of craft sake which we will introduce to progressive restaurants and businesses seeking something new.

Sake workshop held
Participants will learn how to taste and experience how sake pairs with foodstuffs while actually eating.
03
Japanese Tea workshop held
Participants will learn how to taste Japanese tea and experience cocktails made with Japanese tea.
