Eikun / Yamahai Junmaishu
Eikun - Aiyama Yamahai Junmai is brewed using the traditional Yamahai method, showcasing depth, balance, and refined umami. Made with 100% premium Aiyama rice from Hyogo (Kobe) for both koji and kake mai, polished to 65%, this sake expresses the elegance and richness for which Aiyama is renowned.
Fermented with Shizuoka Yeast NEW-5, it opens with subtle nuttiness and gentle aromatics of banana and aniseed, followed by a smooth texture and a mild, dry finish. The Yamahai brewing method adds structure and savoury complexity while maintaining Eikun’s signature clean profile.
This Junmai is highly versatile in temperature, delicious chilled or at room temperature and Nurukan (40C), where the rice-driven umami becomes more pronounced. A distinctive yet approachable expression of Yamahai Junmai, crafted in the Eikun style.
