Eikun / Junmai-Daiginjo
Named after Tokugawa Yoshinobu, the final shogun of the Edo era who lived in Sunpu Castle, Eikun represents elegance, refine and a deep connection to Shizuoka’s history.
This flagship Junmai Daiginjo is brewed using 100% Yamada Nishiki rice from Hyogo-prefecture (highly regarded), polished down to 40% for both koji and kake mai, an approach typically reserved for competition level Daiginjo. Fermented slowly with Shizuoka Yeast HD-101, it showcases a beautifully fragrant and expressive style that is distinctly Shizuoka.
The palate is smooth, rich and gently syrupy with delicate aromas of candy floss, soft sweetness and a refined, long finish. Despite its depth the sake remains elegant and balanced perfect for special occasions or refined food pairings.
A true expression of Eikun Sake Brewery’s craftsmanship and one of the finest examples of modern Shizuoka sake.
