Haginishiki Kimoto Junmai Ginjo Omachi, in 2021, the polishing rate was adjusted to 58% as part of an exploration into the impact of different rice polishing ratios. Brewed using Shizuoka Ginjo methods with the traditional Omachi rice, this sake offers a clean, refined profile with a subtle, delicate sweetness. For three years, the brewery experimented by altering the Omachi rice milling rate by 2% to better understand the unique character of this iconic rice, often casually referred to simply as “Omachi.”
