Haginishiki / "Omachi"" Junmai-Ginjo
Haginishiki Kimoto Junmai Ginjo Omachi is brewed using traditional Shizuoka Ginjo methods and the iconic Omachi rice, polished to 58%. In 2021, the brewery adjusted the polishing ratio as part of a three year exploration, changing the milling rate by 2% each year to better understand and express Omachi’s distinctive character. The result is a clean, refined sake with gentle acidity and a subtle elegant sweetness.
Produced by Haginishiki Shuzo in Shizuoka City, this sake reflects the brewery’s hallmark purity, supported by soft underground water from the Abe River. The brewing is led by a female tōji (Ms Ayano Hagiwara), whose precise and thoughtful approach brings clarity and balance to the naturally expressive Omachi rice. Often affectionately referred to simply as “Omachi,” graceful and deeply food-friendly.
