Hatsukame Junmai Ginjo “Karakara Beppin” takes its name from the Japanese onomatopoeia “karakara,” meaning perfectly dry. With a Sake Meter Value of "+10", this sake delivers a distinctly super-dry profile, yet remains beautifully balanced and refined.
Brewed using Tojo Yamada Nishiki rice polished to 55%, the palate contrasts its crisp, dry mouthfeel with lower acidity, allowing the natural, elegant sweetness of the rice to gently emerge. Smooth and pure, it glides down the throat like pristine water, inviting slow enjoyment over multiple glasses alongside food.
Aromatically, it shows ripened tropical fruit notes, supported by well-integrated umami and acidity, and an exceptionally smooth finish. Designed as a classic, food-driven Junmai Ginjo, it excels at the table rather than overpowering it.
This sake pairs especially well with seasonal fatty fish such as southern bluefin tuna and bonito from Yaizu Port, as well as juicy umami-rich meat dishes and lightly battered fried foods. It is also an excellent match for white fish and Japanese dishes featuring bonito-based dashi.
