This Junmaishu is brewed using the traditional Yamahai method, generously using 100% famous Aiyama rice from Kobe for both Koji and Kakemai, polished down to 65%. Using Shizuoka Kobo "NEW-5" yeast, the nose has a hint of nuttiness followed by an enjoyable mild & dry finish.
